Great! I always wondered what congee was. I eat an Indian version of congee, called Kitchadee or Kitcharee. It's rice, water and split mung beans. You can add spices and vegetables to your liking. The soupier, the easier it is to digest. I like to make it the consistency of a soupy stew. In Ayurveda, this food is thought to be the easiest to digest and great food to eat when you want to detoxify or really nourish yourself. It's also great for when you're sick. I like to make mine with cumin seeds, mustard seeds and turmeric which I fry up in a little oil or ghee (clarified butter).
