Picking the Right Wok

Woks come in all kinds of materials: steel, cast-iron, carbon steel and iron/enamel varieties. The trick is choosing the right one for your stove and your cooking needs.


The wok is called a "kuali" in Malaysia, where I am from. My mother's most precious possession upon moving to Canada more than 30 years ago was her cast-iron kuali, which she uses to this day. I am on a mission to find my own wok and uncovered some intriguing facts.
