New Year's Fish: a steamed bass/pickerel recipe

Chinese New Year's, starting Feb. 18, is a chance for a fresh start. Food symbolizes alot in Chinese culture and during this time, whole fish is prepared for meals.


On the Lunar New Year's Eve, whole chicken and fish is served to the family. This signifies a wholeness and provides a sense of prosperity. There should always be leftovers as this also symbolizes a surplus. It's easy to make whole steamed fish (usually bass or pickerel), just include some scallions, Chinese wine and peanut oil and voila! a great dish is created.
