In India, eggplant is known as brinjal and has been used in dishes on the continent for many centuries. As well, chickpeas are used as a healthy protein supplement.


Dishes from India are both spicy and cooling. Check out my chickpea in spicy tomato sauce and Indian eggplant with yogurt dishes - great additions to any meal. They are easy to prepare and guaranteed to please the tummy.
