Boiled Rice Soup: Congee is King

Some people reach for chicken noodle soup when they're sick but in Asia, many people prefer "congee," or boiled rice soup.


Whenever there's leftover rice, it's always great to boil it up the next day with lots of water to make a kind of porridge. Look in the fridge to see what you can cook it with - pork and pork bones, chicken, seafood, stir-fried veggies, tofu (on top!) etc... You are only limited by your own imagination. If you're boiling it up with chicken, don't forget to add a few slivers of ginger just to give it that extra zing and goodness. Eat with soy sauce and some scallions on top.
