Soy Sauce Chicken: a simple family meal

We always need another chicken recipe afterall, it's probably the one meat that most mothers cook.

What's for dinner? That oft-repeated, time-honoured question asked around the world. For me, family meals during the week day were often filled by soy sauce chicken. It's delicious, effortless and can keep for a few days.

Last week, in my Rice Rules article, I pledged to provide a recipe to go with white rice. So, here it is.

Mom sent me her recipe to share with you, dear readers, so keep it close to your heart. And, if you like to eat chicken, consider these other recipes: Hainanese Chicken Rice, Lemongrass Chicken, Quick Chicken Korma and Sri Lankan Chicken Curry.

I'm very interested to try this dish as I love soy sauce chicken.
Can you please advise how it is possible to simmer only a half cup of water (with fried garlic and browned sugar) for a good 30-45 mins without losing much, if not most, of the liquid?
I also need to understand how it is possible to cook a whole chicken (un-chopped) with so little water (even if the water remains at half-cup quantity despite the simmering). Is there a discrepency in the liquid qty or I should multiply the quantity of everyting (except the chicken) by say, 8-10 in order to raise the level to almost cover the chicken? Please advise as I'm really keen to try this out. Thanks.
