Soothing black bean soup for the tired Post-Christmas soul

Give the tummy a rest with soothing black bean soup. The main festivities are over and you've eaten your share of holiday meats, potatoes and goodies - time for a break!

This simple black bean soup recipe is from my mother's own repertoire. It's a nice change from all that turkey and stuffing.

BLACK BEAN SOUP RECIPE

Ingredients:

  • 1 cup black beans
  • 1 lb pork side ribs
  • 5 cups water
  • 1 tsp salt
  • 3 to 4 Ginger slices
  • Pepper ( Ground pepper and/or pepper berries)

Preparation:

Soak beans overnight and trim the fat off pork side ribs. Cut ribs into single pieces or - inch length.

Method:

  1. Boil water in pot and add the pork ribs.
  2. When the water boils again, throw in the black beans. Boil and then reduce to medium heat.
  3. Add salt and pepper.
  4. Simmer until the bean is soft.

Serves a family.
