Teriyaki is a Japanese cooking technique used for many popular chicken, steak and fish meals.
The word teriyaki comes from two Japanese words, “teri” meaning a shine which comes from the mirin in a recipe, and “yaki” which means grilling or broiling. Teriyaki sauce contains mirin or a sake which is added to soy sauce, sugar or honey to make a sauce for basting meat. The meat is then grilled and the “teri” leaves a shine to the meat.
Japanese style teriyaki has gained popularity in many western countries. Easy teriyaki recipes are available for the beginning cook or more traditional recipes are available to those interested in experiencing the original type dishes. Whether cooking teriyaki salmon or making a teriyaki chicken rice bowl, the basic ingredients for the sauce are the same. A quick teriyaki meal can be prepared by maintaining pantry stock of the basic staples used in the sauce.
Make Your Own Teriyaki Chicken Bowl
1/3 C sugar
1/4 C soy sauce
1 T lemon juice
1 t vegetable oil
1/8 t garlic powder
1/4 C water
1-2 T cornstarch
Combine all except water and cornstarch.
Combine water and cornstarch. Add to saucepan and cook on high
Bring to a boil. Reduce heat and simmer until thick.
Add cubed chicken.
Put a serving of rice in a plastic storage bowl.
Top with chicken mix, cover with lid and freeze for later use.
Teriyaki Salmon: Different Tastes to Healthy Foods
4 salmon steaks
1/2 cup sake
1-1/2 cup soy sauce
6 tablespoons white sugar
3 garlic cloves minced
6 scallion (green) onion chopped finely
1/3 cup vegetable oil
Mix marinade until sugar is dissolved
Cut steaks into chunks and thread on to skewers
Place in a shallow dish and pour marinade over skewers.
Cover and refrigerate for 2 hours.
Return to room temperature before cooking.
Save the marinade for later use. Oil the grill rack before placing skewers on to cook.
Bush with reserved marinade, cook 5 minutes and roll skewers, repeat till done.
Serve Beef and Vegetables as Teriyaki
Vegetarians can enjoy teriyaki also by using just the vegetable part of this recipe. Beef can be replaced with pork, fish, or turkey.
Stir Fried Beef and Vegetable Teriyaki
1 lb. top round, sliced thin
4 carrots sliced diagonally
3 zucchini sliced diagonally
1/3 cup vegetable oil
2 tablespoon brown sugar
Teriyaki sauce
Rice
Heat 3 tablespoons oil in a large skillet or wok; add meat slices.
Cook over medium heat until no red meat remains
Remove cooked meat placing in a bowl lined with pape rtowel. Cover;
Add 2 tablespoons of oil to wok;. Add carrots. Cook 3 minutes.
Add zucchini; cook 3 minutes longer.
Return meat to skillet and add teriyaki sauce
Cook and stir until mixture thickens slightly.
Serve over hot rice.
Teriyaki Sauce Recipe
1 cup sugar or brown sugar
1 cup. rice wine or sake
1 clove garlic, crushed
1 wedge of lemon juice and zest
Mix together until sugar is dissolved.
